Step 1: Remove your steaks from the freezer and defrost them overnight in the fridge. (in or out of packaging - out will allow the steak to dry up a little bit and develop a crust when cooking.
Step 2: Thaw outside 30 mins before cooking.
Step 3: Pat dry and season your steaks with sea salt and freshly ground pepper.
Step 4: Preheat your pan over high heat and lightly add in your oil.
Step 5: Sear your steak on your hot pan on each side for at least 2-3 minutes. If your steak has a side of fat to it, sear these sides and render well, 2-3 minutes will do.
Step 6: Let your steak rest for 5 minutes before slicing into it.
